How to store bread, and why the fridge is the worst place

Cloth bag, bread bin, freezer. How to keep sourdough fresh for three days and use up stale bread.

The question we hear most at the counter: “How should I store the bread?” Short answer: in a cloth bag at room temperature.

Why not the fridge?

Bread goes stale fastest between 0 and 10 °C, exactly the fridge’s range.

Best: a cloth bag

It lets the bread breathe; the crust stays crisp and the crumb moist. Our sourdough keeps three days this way.

For longer: the freezer

Slice and freeze; toast slices straight from frozen.

Stale bread is not waste

  • Grate it into breadcrumbs
  • Make croutons with olive oil and thyme
  • Make French toast
